Directions
- Preheat oven to 450°F. In a bowl, combine ground pork, maple syrup, onion powder, and salt. Mix until ingredients are well distributed. Set aside to allow flavors to meld.
- Line a baking tray and spray with spray oil. Lay down sweet potato slices and spray lightly with oil. Roast for 15-20 minutes, until tender. Cool slightly.
- In a bowl, combine cabbage, apple, red onion, mayonnaise, cider vinegar, and mustard. Mix well and season with salt and pepper to taste. Set aside.
- Portion seasoned pork into 4 patties. In skillet over medium high heat sear patties for 2-2 ½ minutes per side, until it reaches an internal temperature of 160 degrees. Top with cheese if desired.
- Plate burgers with one slice of roasted sweet potato, burger patty, ½ cup of apple slaw, and a second sweet potato slice.
*Ground pork is safe to eat when cooked to 160 degrees.
