- Preheat oven to 300°F. Prepare baking tray with a layer of foil and a piece of parchment on top. Set aside.
- Remove any membrane on the underside of the ribs. Place on prepared tray.
- In a small bowl mix together Lebanese 7 spice, brown sugar, and salt. Liberally season both sides of the ribs, rubbing into the meat to create a crust. Reserve roughly 1 tablespoon of seasoning.
- Place ribs meat side up on parchment. Wrap foil around ribs, creating a pouch lined with the parchment. Bake for 1 ½ to 2 hours, until the ribs are tender and reach an internal temperature of 145 degrees. Follow with 3 minute rest.
- While ribs are baking, combine yogurt and first amount of garlic and season with salt to taste. Set aside.
- In a bowl, add carrots, butter, honey, and second amount of garlic and toss until carrots are well coated.
- Remove ribs once they have reached temperature. Unwrap foil and lay flat. Increase oven temperature to 450°F. Distribute carrots around ribs on tray. Sprinkle reserved seasoning over ribs. Return tray to oven and roast for 10-15 minutes, until carrots are tender and starting to caramelize and top of ribs has gotten crisp.
- Let ribs cool 5-10 minutes before cutting. Serve with garlic yogurt and carrots. If desired drizzle with honey to finish.

- In a bowl, combine all seasonings until evenly distributed. Store in an airtight container away from light.
