Ingredients

Directions
- Preheat oven to 350°F.
- Place pork tenderloin on a foil or parchment lined baking tray. In a small bowl, combine olive oil, lime juice, chili powder, cumin, and garlic. Season with salt and pepper and spread over pork on all sides.
- Roast pork about 15-20 minutes until it reaches an internal temperature of 145°F and allow a 3-minute rest. Remove from oven and cool.
- Dice cooked pork and place into a bowl along with any juices released during cooking. Add salsa and shredded cheese and mix until ingredients are evenly distributed. Season with salt and pepper.
- Evenly distribute pork filling between tortillas, about 1/3 cup each. Spread filling across half the tortilla and fold over with uncovered half.
- In a large skillet over medium heat, spray with cooking spray. Add quesadillas one or two at a time to not over crowd the pan. Cook for 2-3 minutes per side, spraying exposed side of tortilla with more cooking spray before flipping, until cheese is melted and tortilla is golden brown. Repeat for all quesadillas.
- Serve with salsa and sour cream if desired.
