Mornay Sauce

Directions

  • Make mornay sauce by combining butter and flour together in a small saucepan over medium high heat. Cook, stirring constantly, until mixture no longer smells of flour and has a slight nutty aroma, 1-2 minutes.
  • Gradually whisk in milk, a little at a time, until mixture is homogeneous. Continue to heat, stirring, until mixture begins to thicken. Reduce heat to low and stir in cheese, nutmeg, and season with salt and pepper. Remove from heat and set aside.
  • Preheat flat top to 350-400°F or panini press to medium high. Adjust oven racks to top of oven and preheat broiler.
  • Spread roughly 1 teaspoon of Dijon mustard on 4 slices of bread. Sprinkle each with ¼ cup of cheese. Top with a piece of ham steak or 3 oz of sliced ham and ¼ cup more cheese. Finish with second slice of bread. Butter top side of bread.
  • Place sandwich buttered side down on either flat top or panini press. Butter other side of bread. ​Weigh sandwich down and cook 3-4 minutes per side, until cheese is melted.
  • Place sandwiches on foil lined sheet tray. Top each with roughly ¼ cup of mornay sauce. Broil in preheated oven for 1-3 minutes until sauce is golden brown and bubbling, be careful not to burn sauce. Serve hot.
