Blackened Pork Chops with Cheesy Bacon Grits

Ingredients
Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.
Directions
- Season pork chops on both sides with Cajun seasoning. Set aside.
- n a saucepot bring milk, water, butter, and salt to a boil. Slowly pour in grits while stirring constantly. Reduce heat to medium low and simmer, stirring occasionally, until grits are tender and liquid is absorbed, about 20-25 minutes.
- While grits are cooking, heat olive oil in a skillet over medium high and spray with cooking spray. Sear seasoned pork chops on both sides until an internal temperature of 145°F is reached, about 2-3 minutes per side depending on thickness. Remove chops and rest 5-10 minutes.
- If desired, deglaze pan with vinegar. Add cream and stir until boiling. Remove from heat.
- Once grits have finished cooking, remove from heat and stir cheese, bacon, and scallions. Plate grits with pork chops and drizzle with cream sauce if desired.
NOTES:
- If pork chops have a significant fat cap, sear that first before searing on both sides.
