Ingredients
Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.
Directions
- Preheat grill to 250°F, with an indirect heating location – if using a gas grill, only light half of the burners; if using a charcoal grill, move hot coals to one side of the grill.
- Cut rib rack into individual ribs.
- In a small bowl combine brown sugar, smoked paprika, and cayenne. Rub mixture into each individual rib on all sides.
- Halve 6 slices of bacon. Wrap one full slice and one half slice of bacon around each rib. Secure bacon with toothpicks as needed.
- Carefully place ribs on indirect section of preheated grill. Grill for 1 ½ - 2 hours, until ribs reach an internal temperature of around 195°F, turning half way through.
- Increase grill temp to 350-400°F. Remove toothpicks securing bacon. Brush on all sides with BBQ sauce and move to the direct heat section of the grill. Turn ribs every 2-3 minutes and continue to brush with BBQ sauce until well caramelized and bacon is crisp on all sides.
- Remove ribs from grill and cool for 5-10 minutes. Serve with additional BBQ sauce as desired.
