Maple Glazed Pork Chops with Hasselback Potatoes

Ingredients
Before we get cooking, here’s everything you need. Check items off as you go — at home or in the store.
Directions
- Preheat air fryer to 375°F
- Cut 1/8” slices into potato, being sure not to cut all the way through, roughly ¼” of the potato should be left intact. Placing the potato between two chopsticks will help prevent cutting completely through.
- Brush potatoes with olive oil and season with salt and pepper, being sure to oil and season between the slices.
- Place hasselback potatoes in preheated air fryer for 15 minutes.
- While potatoes are cooking, in a bowl combine melted butter, maple syrup, and garlic powder.
- Remove potatoes after 15 minutes and brush with butter mixture, being sure to brush between slices. Continue to cook until potatoes are tender, about 15 more minutes.
- While potatoes are cooking, spray a skillet with cooking spray and heat on medium high. Sear pork chops for 1 minutes on each side. Drizzle pork with chops with glaze and continue to cook on both sides, glazing after every rotation, until internal temperature reaches 145°F and glaze has caramelized but not burnt. Rest 5 minutes before serving.
- Once potatoes are tender, remove from air fryer. Serve with glazed pork chops and scrambled eggs. Use any remaining glaze to drizzle over plate.
NOTE:
- Potatoes can be cooked in an oven at 375°F for 45 minutes before glazing and continuing to cook until tender, about 15 minutes.
