- Combine warm milk with yeast and allow to sit until frothy, about 3-4 minutes. Grease a 9”x13” dish and set aside.
- In the bowl of a stand mixer with the paddle attachment combine milk mixture, eggs, butter, and first amount of maple syrup. Mix on medium until evenly distributed. Add 4 cups of bread flour and salt and mix on medium until flour is just fully mixed into the wet ingredients. Allow to sit for 5 minutes.
- Scrape dough off the paddle attachment and replace with the dough hook. Knead on medium until dough pulls away from sides of bowl and is no longer sticky, adding additional flour as needed if dough is too sticky – but do not exceed the additional ½ cup of flour. This should take roughly 5-7 minutes. Transfer to an oiled bowl, cover and let sit until doubled in size, about 30 minutes.
- While dough is rising, combine brown sugar with cinnamon.
- Once dough has doubled in size, flour work surface, dump out dough and roll out into a roughly 15”x 24” rectangle. Evenly spread first amount of bacon fat over dough, leaving roughly ½” of dough on the long edge uncovered. Evenly spread the cinnamon brown sugar over bacon fat and sprinkle roughly 1 ½ cups of cooked crumbled bacon, reserving ½ cup for garnish.
- Roll dough along the long side towards the uncovered edge until fully rolled up. Use a ruler to mark 12 equal sections. Use a piece of thread or a knife to portion rolls. Place into greased dish, cover and allow to rise for 20 minutes and preheat oven to 375°F.
- Gently warm heavy cream and pour over rolls. Bake for 20-30 minutes.
- While rolls are baking, in a bowl combine cream cheese, second amount of bacon fat, and second amount of maple syrup. Whisk until smooth.
- After baking, allow rolls to cool for 5-10 minutes before spreading frosting over the top. Finish by garnishing with reserved crumbled bacon.
Note
- Dough can be made by hand by mixing step 2 in a bowl with a wooden spoon, and kneading step 3 on a floured work surface until dough is no longer sticky. A mixture of butter and bacon fat can be used for both the filling and the frosting.
