Ingredients

- Preheat oven to 400°F. Line 2 baking sheets with parchment.
- In a skillet over medium heat, melt butter. Add onion and sauté until translucent. Add celery and cook until softened. Remove from heat and season with salt and pepper. Cool completely.
- Remove bratwurst from casing into a large bowl. Add fennel seed, breaking lightly with fingers or a spoon to release flavor.
- Divide each puff pastry in half lengthwise and roll out slightly. Evenly divide sausage mixture between puff pastry and form into a log along the long edge of the dough, leaving about 1-inch of dough exposed on one side, there will be more on the other. Fold puff pastry over onto the 1-inch exposed side to encase the sausage. Use a fork to seal edges together.
- Divide each log into 8 sections and arrange pieces on the lined baking sheets 2-inches apart. Thin beaten egg with a small amount of water and whisk to combine. Brush each piece of puff pastry with egg wash. Sprinkle with sesame seeds if desired.
- Bake until sausage reaches an internal temperature of 160°F and puff pastry is golden brown, about 15-20 minutes.
- Serve warm sausage rolls with desired dipping sauce.
*Ground pork is safe to eat when cooked to 160 degrees.
