Pork Satay Skewers

These pork satay skewers are marinated for maximum flavor, then grilled until juicy and lightly charred. They work well as an appetizer or a simple main with plenty of versatility to satisfy all the cravings around the table.

Directions

  • In a bowl, whisk together peanut butter, soy sauce, vinegar, garlic, ginger and mustard. Reserve ½ cup sauce.
  • Add pork to the remaining sauce, and mix until evenly distributed. Cover and allow to marinate for 1-2 hours in the refrigerator.
  • Remove excess marinade from pork, and string on soaked skewers.
  • Preheat grill.
  • Grill on high until cooked to 145° F, followed by a 3-minute rest. Serve alongside reserved sauce.
