Directions

  • In a bowl, combine pork, cabbage, shiitake mushrooms, scallions, garlic, ginger, soy sauce, sesame oil, salt and crushed red pepper. Mix well.
  • Portion roughly 1 tbsp pork mixture into a dumpling wrapper. Wet ½ edge of the wrapper. Pitch edges together and seal tightly. Repeat for remaining wrappers. Freeze if making ahead of time.
  • For sauce, combine soy sauce, vinegar and honey. Whisk until honey is fully dissolved. Garnish with scallions.
  • To cook, heat 1 tbsp of vegetable oil in a skillet until hot. Add dumplings and cook until bottom is well seared. Add ¼ cup water; cover and reduce heat to medium. Cook for 4 minutes. Remove lid and continue to cook to re-crisp bottom of dumplings and internal ground pork temperature reaches 160° F. Repeat for remaining dumplings.
  • Serve hot alongside dipping sauce.
